Homemade shortbread


I got this recipe from a Scottish singer I met about a year ago in Inverness. Nice memories, good cookies:

"Scottish Shortbread


this is one of the easiest shortbread recipes I've ever come across.

250 gm plain flour
250 gm self-raising flour (240 plain four + 1,5 teaspoon baking powder + 1,5 teaspoon bicarbonate of soda)
250 gm cornflour (polenta works very good)
250 gm castor sugar
2 x 250 gm packs butter

Sift dry ingredients into a large bowl. Melt butter gently in a saucepan. Pour melted butter into the dry ingredients and mix thoroughly.

Divide the mixture into two and spread evenly into two baking trays (approx 16" x 10" = 25 cm x 25 cm). Prick the shortbread with a fork at intervals - create a pattern, if you like. Place the baking trays into a moderate oven (I use a fan oven which I heat to 150°C) and bake until golden brown.

Take out of the oven and cut into portions, dust with castor sugar and allow to cool completely before storing in an airtight container.
